Calamarata is a wide ring-shaped pasta from Pastificio Liguori, named for its resemblance to sliced squid (calamari). Produced in Gragnano (Naples) and certified Pasta di Gragnano IGP, it is bronze-die extruded and slow-dried for a rough, sauce-grabbing texture.

How to use

Cook in plenty of salted boiling water for approximately 16 minutes, drain and toss with sauce.
