TASTING NOTES
This gorgeous wine is made in a way that is called 'Method Ancestral'. It is pretty much the same as a Pet-Nat - but instead of leaving the lees (that powdery sediment) in the bottle they disgorge it - like what they do with Champagne, as well as ageing this wine for 18 months on the lees.
This wine, although fermented only once - it elegant, lifted, and gorgeously complex bubble. Fresh strawberries intermingle with a salty, minerally edge that makes for a *stunning* drop. Honestly- wine like this is incredibly difficult to make, and Jasper should be super proud of this wine.
