Green yuzu kosho is a vibrant Japanese fermented condiment made by Kushino Farm in Oita Prefecture, Japan. Green yuzu peel and green chillies are salted and fermented separately for around a year, then cold-ground (no heat) and blended with sea salt for a bright, citrusy, salty-spicy paste.
