Piparras (also called guindillas) are slender Basque peppers, pickled in wine vinegar by the century-old Catalan house Espinaler. They're mild and only gently spicy, with a soft crunch, a thin skin and a slightly sweet, tangy bite. The classic way to enjoy them is the Basque "Gilda" pintxo — a skewer of piparra, anchovy and olive — but they're also lovely alongside cheese, charcuterie or a vermouth.
