Calamarata is a wide ring-shaped pasta from Gragnano near Naples, named for its likeness to sliced calamari. Part of the paccheri family, it's bronze-drawn and slow-dried for a firm bite and a rough surface that holds onto sauce. It's made for seafood — toss it with prawns, clams or mussels in a light tomato and garlic sauce, where it can even be mistaken for the squid it imitates.
