MON TOUT - STRANGE LOVE ROSÉ 2023

 

TASTING NOTES

With its pale salmon hue, this wine is like a hazy sunrise in a glass. Subtle tones of toffee apple, watermelon, yellow raspberries, strawberry, and sea spray form a beachy bouquet. The red fruits present on the nose become more concentrated on the palate lending depth of flavour as well as texture to this wine. A savoury note of orange peel and a pinch of spice appear towards the back of the palate and linger there after the dry, refreshing finish.

Natural ferment. Lo-Fi / minimal intervention. Handpicked & handmade. Sustainable farming. Minimal to no sulphur. No fining. No filtration.

MAKER Mon Tout

GRAPES 70% Grenache, 30% Pinot Noir

 

ABOUT

 

Grenache: fruit from dry grown old vines are handpicked and then whole bunch pressed to stainless steel where the juice is given extended contact with solids for 10 days prior to ferment to build texture. Juice is then racked to big old French oak puncheons to undergo cool and slow ferment.


Pinot Noir: soft pressing to extract only the palest of juice then naturally fermented at a cool cellar temperature in stainless steel. Kept on yeast lees with gentle stirring for a few months to build a creamy texture.

We're lucky to have access to some minimal intervention vineyards across Western Australia - from The Great Southern to Margaret River and its surrounds.  Each year, we sample and closely follow the season and find the best fruit we can to make our wines. The resulting wines can be blends or straight varietals, it’s part of the fun, hard work and unknowns of each wine and vintage.

‘Mon Tout’ - in French, means ‘my everything’.  It's an ode to the great loves in our lives.

And that's what Mon Tout is for us. We've always loved the raw possibilities and natural outcomes of minimal intervention winemaking, and have worked over the years to source fruit with lower impact and gentler farming - which we believe is the future for wine.
