TASTING NOTES
The Rosè Condimento is obtained from selected grape must. At La Vecchia Dispensa they use high quality red wine vinegar from Modena Grasparossa grapes to create a perfect sweet & sour marriage. It is not aged in wood, only stainless steel so that the product is not oxidized during the ageing process. It has a very low acidity that enhances the flavour of the must on the palate.
It has a density of 1.21kg/litre and Acidity of 4.5%
PAIRING Salad dressing, seafood, cooked or grilled vegetables (in place of lemon)

Four generations ago, the Pelloni-Tintori family started ageing Balsamic Vinegar in precious wooden casks inside the attic of their house in Modena, Italy.
