GUT OGGAU - TIMOTHEOUS 2020
TASTING NOTES
With only a 3 bottle allocation, this is an interesting slightly skinsy blend of Grüner Veltliner and Weissburgunder from 40 year old vines. Textural, showing spice and citrus notes. Farmed dynamically, this wine is bottled unfined, unfiltered, and with zero addition of sulphur.
Grapes are hand harvested and partially destemmed. One third of the grapes ferment on skin for 3 weeks while the rest are directly pressed, after which the wine is re-blended. Fermentation takes place in used 500L barrels. The wine stays in barrel for an elevate of about 12 months, with no batonnage.
