TASTING NOTES
Colour is clear and dark ruby. A nose of dark plum, black cherry and humus. The palate has hints of cherry juice, black olive and a fine grip. Enjoy now or cellar up to 3 years.
150 doz produced.
De-stemmed. Wild ferment in stainless. Manually basket pressed. Aged 8 months on lees in stainless. Malolactic fermentation complete. Bottled unfined, unfiltered, zero additives.

ABOUT
Our lifestyle is centred around grape growing and rhythms of nature. We are at the beginnings of establishing our own vineyard and permaculture farm in Timboon, Victoria. This is a cool climate site situated along an escarpment of clay and limestone and certified organic.
Currently, our fruit comes from small vineyard parcels from the Bellarine Peninsula that we personally tend. Other fruit is sourced from growers throughout Victoria who are committed to sustainable farming and certified organic and/or biodynamic.
Fruit is handpicked and fermented wild. Manually basket pressed and gravity fed into bottle. Unfined. Unfiltered and without additives or preservatives. An ode to the Matriarchs (The Babches) in our families who made wine this way, by hand and unadulterated.
Our wines do not aim to meet a style, rather to express the nuances of time and place. We hope you enjoy.
