Aromas of phosphorus, fennel and green apple. On the palate, citrus, minerality and a vibrant, lively finish. Drink chilled.
No fining or filtration. Spontaneous wild fermentation. Contains no added sulphites.

ABOUT
A grape predominantly used for Cava blends due to its high natural acidity. This grape added acidity to Macabeu blends and is good to improve bubbles to sparkling. Etymology means 'slope and rocky' which is why this grape is planted at high altitude in hilly, Rocky Mountains.
Payton & Jones are Australian, minimal intervention winemakers. Their collaboration winery is located in the Priorat region (Spain), in a village called "Gratallops" or literally the place where Wolves Sharpen their Claws. We thought it’d be cool to play with that and make any wine that comes from outside Priorat the ‘Red Riding Hood’ wines – hopefully they won’t be better than the Wolf though!
