TASTING NOTES
Golden colour tinged with green, limpid, brilliant. Mineral, chalky nose with aromas of oyster shells, stone fruits (peach) and citrus fruits (lemon). In the mouth there are intense aromas of stone fruits and flint which bring pep and liveliness.
Long and happy persistence until a suave and serene gravity pull through. Very dry and with perfect finesse.

ABOUT
Daughter of Burgundy, Clotilde Davenne grew up in the countryside, at the foot of the Morvan.
This childhood in nature forged her sensitive approach to the world. Everything with smells, flavours, colours, in a mixture of sensations renewed every day.
With her nose in the air and her taste buds on the lookout, she learns vegetable scents: lime blossom, acacia, mint, crumpled herbs, meadow roses, damp undergrowth.
There are also those from the garden: artichokes, peas, beans, which she often crunched on the spot. Games in the orchard: cherries, plums, raspberries and walnuts, until returning to the kitchen: jams, cottage cheese, cakes. Olfactory layers that create delicacies.
Later, Clotilde wished to take advantage of this sensory potential: making wine as a profession when she decided to study oeonology.
As a young graduate, she began with the reds of Beaujolais, discovered the sparkling vineyards of California, before returning to acclimatise the whites of Burgundy in Chablis. As cellar manager, she practices the expression of the terroirs through the wines she has been making since 1989.
