BRYTERLATER - SWELL PETILLANT NATUREL 2020
Salty. Lemon/lime. Fresh yoghurt. Gripping acidity. Aged pallet. Fresh carbonation. Vintage vives.
A new style for us. Made in the traditional Col Fondo method. Picked at 12% potential alcohol and then whole bunch pressed and fermented in neutral
barrels on full lees and without sulphur for 12 months with a healthy amount of battonage and a little malolactic fermentation.
The wine was then racked and a small portion of 2021 Sauvignon juice from the same vineyard was added for carbonation and bottled in April 2021.

“I’ve always gravitated toward wines that are more than the sum of their parts - wines that aren’t perfect, that have something ethereal about them. Wines that speak for themselves, rather than the ego of their maker. Versatility is important to me, too. Bryterlater wines are made with intent, but not rigidity. I'm happy for the wines to be interpreted as the moment calls for them to be.”
Bryterlater wines are made with intent, honesty, and an abundance of respect for the process. We work thoughtfully in the vineyard, using organically farmed grapes from select sites within the North Canterbury region.
Inside the winery, we adhere to minimal intervention practices, in an endeavor to offer wines that speak for themselves, rather than the ego of their maker. We acknowledge whatever the season gives us, and use it to guide our process and decisions.
We find great joy in making youthful vibrant wines released in the spring, but also relish the discovery of longer aging styles which demand more nurturing and patience before coming into their own.
Our intention is to create deeply considered, juicy wines that capture the energy of the vineyard, and bring immense joy to the beholder.
